Baghrir or “honeycomb” pancakes
This recipe will make 16 to 18 Baghrirs, also called honeycomb pancakes, are a Berber pancake eaten in North Africa.
To prepare
Heat the water and milk until lukewarm. Dissolve the yeast in 2 tablespoons of the lukewarm water and milk. Combine the semolina, sifted flour, sugar and salt in a mixing bowl.
Beat the eggs, add the dissolved yeast, and then the rest of the lukewarm water and milk.
Gradually incorporate this mixture into the flour.
Whisk for a few minutes to obtain a smooth and creamy batter.
Cover with a cloth and leave to rise in a warm place for 2 hours.
Set the crêpe maker to 230 °C (or position 6 on the Diabolo crêpe maker) and wait for the plate to reach the correct temperature. Lightly oil the plate of the crêpe maker.
Pour 2/3 of a ladle measure of batter onto the crêpe maker and spread using the bottom of the ladle until your Baghrir are 12 to 14 cm in diameter.
Cook for about 2 minutes. A host of tiny craters will form on the surface. The Baghrirs are ready: do not flip them over, just place them smooth side down without stacking.

Enjoy your hot Baghrir pancakes, coated in melted butter and honey. They can also be topped with sugar, grated coconut, jam, etc.
