Bánh xèo Vietnamese pancakes
This recipe will make 8 Bánh xèo: delicious pancakes from Vietnam.
To prepare
Add both types of flour, eggs, salt, powdered coconut, potato starch, cumin and oil into a bowl. Combine, gradually adding water to make a semi-liquid batter.
Add the chopped chives.
Cover with a cloth and leave to rise for 1 hour.
Set the crêpe maker to 200 °C (or position 3 on the Diabolo crêpe maker) and wait for the plate to reach the correct temperature. Lightly oil the plate of the crêpe maker.
Pour one ladle of batter onto the crêpe maker. Quickly spread the batter using a crêpe rake or the Easy Crep spreader. Cook for 30 seconds on each side.

Enjoy your Bánh xèo pancakes filled with a blend of chopped onion, soy, peeled prawns, thin strips of pork and spices. Stir fry this filling in the pan and spread over one half of a Bánh xèo pancake. Fold the pancake in half, like a turnover, and place a few salad leaves on the side. Serve your pancake with soy sauce and garnish with the chives and a slice of lemon.
